Happy Halibut Fish

  • 400g Driscoll's strawberries
  • 1 ripe mango, peeled and cut into 1cm cubes
  • 1 ripe avocado, cut into 1 cm chunks
  • 1 jalapeño or chili pepper, finely sliced
  • 4 halibut fillets (120 to 170 g each)
  • 2 tablespoons lime juice
  • 1 tablespoon fresh coriander
  • 1/2 teaspoon sea salt
  • 1 tablespoon olive oil
  • 1/4 teaspoon black pepper
  • 1 lime, cut into 4 wedges
  • pinch of salt

Looking for a dish that will definitely bring some berry joy to your day? Here's a recipe that captures all the flavours of summer in a light, refreshing bite.

Directions

  • Cut the strawberries into 1 cm pieces and place in a large bowl
  • Add the mango, avocado, jalapeño, lime juice and ½ teaspoon salt and stir gently
  • Preheat the grill to a medium temperature
  • Brush the halibut fillets with olive oil and season with remaining salt and pepper
  • Grill the fish fillets for 4-5 minutes, turn over gently and cook for a further 3-5 minutes
  • Serve with a wedge of fresh lime juice and the fruity berry salsa
