  • 250g Driscoll’s Raspberries
  • 250ml full-fat coconut milk
  • 3 Tablespoons agave nectar or honey
  • 2 bananas, sliced and frozen
  • 4-5 fresh mint leaves, finely chopped

This delicious summer treat is sweet and tangy. A dairy-free treat that everyone can enjoy!

Directions

  • PLACE raspberries into a blender.
  • ADD coconut milk.
  • ADD agave or honey.
  • BLEND on high speed until berries are liquefied.
  • ADD half of frozen banana slices.
  • BLEND again on high speed until mixture swirls easily inside blender.
  • ADD remaining banana slices.
  • BLEND again on high speed until mixture swirls easily inside blender.
  • POUR mixture into a mixing bowl.
  • ADD mint.
  • ADD chocolate chunks (if using).
  • FOLD gently to incorporate ingredients.
  • TRANSFER nice cream to a bread pan.
  • CHILL in freezer for several hours or until firm.
  • ALLOW to soften slightly before serving.
