Blueberry Cheesecake Bites

  • 100g of Driscoll's Blueberries
  • 100g of dates
  • 80g of oats
  • 50g of almonds
  • 200ml coconut cream
  • 120g cashew nuts
  • 1 banana
  • 1 tbsp of chia seeds
  • 2 tbsp of honey
  • ¼ tsp of salt

Indulge in the luscious flavors of cheesecake—without the guilt! These Healthy Blueberry Cheesecake Slices are a dreamy combination of wholesome ingredients and irresistible taste.

Directions

PLACE all the base ingredients in a blender and blitz until fine crumbs.

PRESS down into a lined tin and pop in the fridge while you make the filling.

PLACE the filling ingredients into the blender (other than the blueberries) and blend until smooth, spoon a layer of the mixture onto the base then add the blueberries to the filling and whizz again until smooth.

STIR through whole blueberries then spoon on as the top layer.

PUT the tray into the freezer for 1 - 2 hours then SLICE.
