This vibrant spring salad combines the freshness of kale, sweet blackberries, juicy tomatoes, and crunchy nuts, creating a delightful contrast of flavours and textures. Ideal for a light yet satisfying meal, this salad is bursting with seasonal goodness.
Directions
RUB your serving bowl with garlic then add the chopped kale with a glug of olive oil, salt and pepper and the juice of half a lemon.
MASSAGE everything together then put to one side.
SLICE the onions, tomatoes and finely chop the nuts.
SLICE the blackberries in half then toss everything together.
FRY the halloumi in honey and olive oil until golden then sprinkle with chilli flakes.
To make the dressing, puree the blackberries then whisk in the other ingredients, taste and add salt and pepper if needed.
DRIZZLE over the top of your salad, add the golden halloumi and enjoy!
